2 lbs beef chuck roast
2 cups beef broth
1 onion, sliced
3 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
4 sandwich rolls
1 teaspoon dried herbs (optional)
Instructions
Place the beef roast in the bottom of the crockpot.
Season the roast with salt and black pepper.
Add sliced onions and minced garlic around the beef.
Pour beef broth over the roast.
Cover the crockpot and cook on low for 7–8 hours or high for 4–5 hours.
Remove the beef and shred it using two forks.
Return the shredded beef to the crockpot to absorb the broth.
Place the beef onto sandwich rolls.
Serve the sandwiches with a small bowl of the broth for dipping.
Notes
Chuck roast works best for tender shredded beef.
Lightly toast the bread to prevent sogginess.
Extra onions can be added for additional flavor.
Leftover beef can be stored in the refrigerator in an airtight container.
