  • 2 pounds boneless skinless chicken breasts
  • 3 bell peppers (red, yellow, and green), sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 cup chicken broth
  • 8 small tortillas (for serving)

Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add the sliced bell peppers and onions on top of the chicken.
  3. Add the minced garlic.
  4. Sprinkle chili powder, cumin, paprika, garlic powder, onion powder, salt, and black pepper over the ingredients.
  5. Pour the chicken broth into the crockpot.
  6. Cover and cook on low for 4–6 hours or on high for 2–3 hours.
  7. Remove the chicken and shred it using two forks.
  8. Return the shredded chicken to the crockpot and mix with the peppers and onions.
  9. Warm the tortillas and fill them with the chicken fajita mixture.
  10. Serve with your favorite toppings such as avocado, cheese, or fresh herbs.

  • Chicken thighs can be used instead of chicken breasts for a juicier texture.
