Crockpot Cheese Tortellini and  Sausage is a comforting slow cooker pasta dish made with tender cheese tortellini, savory chicken sausage, and a rich tomato-based sauce. This easy recipe is perfect for busy weeknights and family dinners.

  • 1 package (20 ounces) cheese tortellini, refrigerated or frozen
  • 12 ounces chicken sausage, sliced
  • 1 can (28 ounces) crushed tomatoes
  • 1 can (15 ounces) tomato sauce
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup fresh spinach (optional)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated cheese

Instructions

  1. Slice the chicken sausage into round pieces about 1/2 inch thick.
  2. Add the sliced chicken sausage to the crockpot.
  3. Pour in the crushed tomatoes and tomato sauce.
  4. Add the minced garlic, Italian seasoning, salt, and black pepper.
  5. Stir the ingredients gently to combine.
  6. Cover the crockpot and cook on low for 4–5 hours or on high for 2–3 hours.
  7. Add the cheese tortellini to the slow cooker during the final 20–30 minutes of cooking.
  8. Stir gently so the tortellini are coated with the sauce.
  9. Add spinach if desired and sprinkle the shredded mozzarella and grated cheese on top.
  10. Cover and allow the cheese to melt for about 5 minutes before serving.

Notes

  • Add the tortellini during the final cooking stage to prevent overcooking.
  • Frozen tortellini can be added directly without thawing.
  • If the sauce becomes too thick, add a small amount of milk or broth.
  • Store leftovers in an airtight container in the refrigerator for up to three days.
  • Reheat gently on the stovetop or microwave before serving.
