Crispy Loaded Hasselback Potato Bites are mini, flavorful, and cheesy potatoes roasted to perfection and topped with sour cream, bacon, and green onions—ideal for parties, holidays, and game day snacks.

Ingredients

  • 1 pound small creamer potatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon Kosher salt
  • Dash of freshly ground black pepper
  • 4 slices Gouda cheese, cut into 1-inch squares
  • 1/4 cup light sour cream
  • 2 slices bacon, cooked, drained, and crumbled
  • 1 green onion top, sliced
  • Dash of paprika

Instructions

  1. Preheat oven to 400°F and line a baking sheet with foil.
  2. Wash and dry potatoes. Slice a small piece off the bottom of each potato to allow it to sit flat.
  3. Place each potato in the bowl of a wooden spoon and make 1/4-inch slices across the top, without cutting all the way through.
  4. Coat potatoes in olive oil, place on baking sheet, and sprinkle with salt and pepper.
  5. Roast in the oven for 30–35 minutes, until tender and crispy on the edges.
  6. Remove from oven and let cool slightly. Insert cheese slices between every other potato slice.
  7. Return to oven and bake for an additional 5 minutes to melt the cheese.
  8. Cool for 10 minutes, then top each potato with a dollop of sour cream, crumbled bacon, and green onions.
  9. Sprinkle with paprika and serve warm or at room temperature.

Notes

  • Use Yukon Gold or red potatoes if creamer potatoes aren’t available.
  • Cheddar, Colby Jack, or mozzarella can be used instead of Gouda.
  • Use a wooden spoon or chopsticks to prevent slicing through the potatoes completely.
  • For best presentation, compress the potato slices slightly after baking to help the cheese hold them together.
  • Leftovers can be reheated in the oven or microwave.
