  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 tbsp milk
  • 1 cup shredded unsweetened coconut
  • 1 cup panko breadcrumbs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Cooking oil spray or oil for frying

Instructions

  1. Preheat the oven to 400°F (205°C) or prepare a fryer or air fryer according to manufacturer instructions.
  2. Pat the chicken dry and season lightly with salt and pepper.
  3. Set up three bowls: one with flour, one with eggs whisked with milk, and one with coconut, breadcrumbs, and seasonings mixed together.
  4. Dredge each chicken strip in flour, dip into the egg mixture, then press firmly into the coconut coating.
