  • 4 (4 oz each) thin boneless skinless chicken breast cutlets (1 lb total)
  • 1 ½ tablespoons all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon paprika
  • 2 large egg whites, beaten
  • 1 ½ oz finely shredded Parmesan cheese, divided
  • ½ cup plain panko breadcrumbs
  • ½ teaspoon dried parsley flakes
  • 2 cups chopped romaine lettuce
  • 2 tablespoons light Caesar dressing
  • 4 sandwich rolls or hamburger buns
  • ½ teaspoon garlic salt
  • 4 lemon wedges
  • Cooking spray (for air fryer/oven use)

Instructions

  1. Place chicken cutlets in a bowl. Mix flour, salt, pepper, garlic powder, and paprika. Toss chicken to coat evenly.
  2. Beat egg whites in a shallow dish. In another dish, mix 1 oz Parmesan with panko and parsley.
  3. Dip each chicken piece into the egg white, then press into the breadcrumb mix to coat both sides.
  4. Air Fryer: Preheat if needed. Place chicken in a single layer, spray with cooking spray. Cook at 400°F for 6 minutes, flip, spray again, and cook another 6 minutes.
  5. Oven: Preheat to 425°F. Line a baking sheet with parchment. Place coated chicken on tray, mist with spray. Bake 8 minutes, flip, spray again, and bake another 8 minutes.
  6. Toss chopped romaine with Caesar dressing and remaining Parmesan.
  7. Mist buns with cooking spray, sprinkle with garlic salt, and toast cut side down in a skillet until golden.
  8. Assemble sandwich: bottom bun, chicken cutlet, Caesar salad mix, squeeze lemon wedge, and top bun. Serve immediately.
