This creamy cucumber salad is a quick, refreshing summer side dish made with sliced cucumbers, red onions, and a tangy sour cream dressing flavored with lemon juice and dill.

Ingredients

  • 1 large cucumber (English or regular, seeded if needed)
  • 1/4 red onion, thinly sliced
  • 1/2 cup sour cream (or Greek yogurt)
  • 2 tbsp lemon juice
  • 1/2 tsp dried dill (or 2 tbsp fresh dill)
  • 1 tsp granulated sugar (optional)
  • 1/2 tsp salt

Instructions

  1. In a medium bowl, whisk together the sour cream, lemon juice, dill, sugar (if using), and salt. Set aside.
  2. Peel the cucumber if desired, then slice it thinly. Thinly slice the red onion as well.
  3. Combine the cucumber and red onion slices in a large bowl.
  4. Pour the dressing over the cucumber mixture and stir to coat evenly.
  5. Let the salad sit for 5–10 minutes to allow the flavors to meld, then stir again before serving.

Notes

  • For extra crunch and a peppery note, add thinly sliced radishes.
  • Replace lemon juice with white vinegar for a tangier taste.
  • Use Greek yogurt as a lighter, high-protein alternative to sour cream.
  • Pre-salt cucumbers and let them drain to reduce wateriness if storing.
