  • 2 boneless skinless chicken breasts
  • 1 package cheese tortellini
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried herbs
  • 1 cup fresh spinach (optional)

Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. Season the chicken with salt and black pepper.
  3. In a bowl, mix chicken broth, heavy cream, garlic, olive oil, and herbs.
  4. Pour the sauce mixture over the chicken.
  5. Cover the crockpot and cook on low for 5–6 hours or high for 3–4 hours.
  6. About 30 minutes before serving, add the tortellini to the crockpot.
  7. Stir gently to coat the tortellini in the sauce.
  8. Add spinach if desired and allow it to wilt.
  9. Serve warm and enjoy.

Notes

  • Frozen tortellini can be used instead of refrigerated.
  • Chicken thighs can replace chicken breasts for extra flavor.
  • Add additional broth if the sauce becomes too thick.
