Creamy Cowboy Pasta Salad is a hearty and flavorful pasta dish made with tender pasta, beans, fresh vegetables, chicken sausage, and a rich creamy dressing. Perfect for picnics, potlucks, and family meals.

  • 12 oz rotini pasta
  • 1 cup chicken sausage, sliced and cooked
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1 bell pepper, diced
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Instructions

  1. Cook the rotini pasta according to the package instructions until al dente.
  2. Drain the pasta and rinse it under cold water to cool completely.
  3. Slice and lightly cook the chicken sausage in a skillet until slightly browned, then let it cool.
  4. In a large mixing bowl, combine the cooled pasta, black beans, corn, cherry tomatoes, red onion, bell pepper, and cooked chicken sausage.
  5. In a separate bowl, whisk together mayonnaise, sour cream, lime juice, garlic powder, salt, and black pepper to create the dressing.
  6. Pour the dressing over the pasta mixture.
  7. Gently toss everything together until evenly coated.
  8. Cover the bowl and refrigerate the pasta salad for 30–60 minutes before serving.
  9. Stir once more before serving and adjust seasoning if needed.

  • Use rotini or other short pasta shapes that hold dressing well.
  • Allow the pasta to cool completely before mixing with dressing.
