Cranberry and Brie Filo Crackers are a festive, flaky appetizer featuring creamy brie, tart cranberry sauce, and crunchy toppings wrapped in delicate filo pastry. Perfect for holiday parties or elegant entertaining with minimal effort.

  • 6 sheets frozen filo pastry, thawed
  • 50 g butter, melted
  • 250 g brie, cut into long slices
  • 275 g cranberry sauce
  • 1/4 cup flaked almonds
  • 1 tablespoon black sesame seeds

Instructions

  1. Preheat oven to 350°F (180°C). Line two baking trays with parchment paper.
  2. Place thawed filo sheets on a flat surface. Cut each sheet into 3 long strips, then cut each strip in half to make 36 rectangles.
  3. Keep unused filo sheets covered with a damp towel while working.
  4. Place one filo rectangle on a clean surface and brush lightly with melted butter.
  5. Add a slice of brie, a teaspoon of cranberry sauce, and a few almond flakes to one end.
  6. Roll up gently and pinch both ends to form a cracker shape.
  7. Repeat with remaining filo sheets and filling.
  8. Place crackers seam-side down on the trays, brush tops with butter, and sprinkle with sesame seeds.
  9. Bake for 15–20 minutes until golden and crisp.
  10. Serve warm with optional rosemary or chive garnish.

Notes

  • Thaw filo in the fridge, then bring to room temp before using.
  • Cover filo with a damp towel to prevent drying.
  • Do not overfill to avoid leaks.
  • Double-layer filo if a sheet tears.
  • Can be made ahead and baked from frozen with extra time.
  • Serve with dips like hot honey, fig jam, or balsamic glaze.
