  • 1/3 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 3 tbsp red wine vinegar
  • 2 tbsp lime juice
  • 1 tbsp sugar
  • Salt and pepper to taste
  • 1 avocado, diced (optional)

Instructions

  1. Drain and rinse beans thoroughly.
  2. Dice all vegetables into small, even pieces.
  3. Whisk together olive oil, vinegar, lime juice, sugar, salt, and pepper.
  4. Combine beans, corn, tomatoes, onion, peppers, jalapeño, and cilantro in a large bowl.
