  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup sweetened shredded coconut
  • 1 cup white chocolate chips
  • For the Filling:
  • 1 quart ube ice cream
  • Optional Coatings:
  • Toasted coconut
  • White chocolate chips
  • Chopped pistachios
  • Sprinkles
  • Freeze-dried berries

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Whisk together the flour, baking soda, and salt.
  3. Cream the butter with the sugars until fluffy, then beat in the egg and vanilla.
  4. Fold in the dry ingredients, shredded coconut, and white chocolate chips.
  5. Scoop portions onto lined baking sheets and bake for 10–12 minutes. Cool completely.
  6. Place a scoop of slightly softened ube ice cream between two cookies.
  7. Roll the exposed ice cream edges in toasted coconut or other coatings.
  8. Freeze for at least 2 hours before serving.
