Classic Italian Bruschetta is a fresh and flavorful appetizer made with toasted bread topped with a chilled tomato-basil mixture, drizzled with olive oil and balsamic vinegar.

  • 2 vine-ripened tomatoes, diced
  • 1/4 cup chopped fresh basil
  • 3 tablespoons extra virgin olive oil, divided
  • 1/2 teaspoon dried oregano
  • Pinch of salt
  • 1 teaspoon balsamic vinegar
  • 1 Italian-style baguette, sliced
  • 1 clove garlic

Instructions

  1. Dice the tomatoes and combine them in a bowl with chopped basil, dried oregano, a pinch of salt, 1.5 tablespoons of olive oil, and 1 teaspoon of balsamic vinegar. Mix gently and chill for 10–30 minutes.
  2. Slice the baguette into 1/4- to 1/2-inch thick slices.
  3. Cut the end off the garlic clove and rub it onto both sides of each bread slice.
  4. Drizzle or brush both sides of the bread with remaining olive oil.
  5. Toast the bread slices in a hot skillet or grill until golden brown on both sides.
  6. Top the hot toasted bread with chilled tomato mixture just before serving.

Notes

  • Use high-quality vine-ripened or heirloom tomatoes for best flavor.
  • Fresh basil is essential; avoid using dried.
  • Only assemble bruschetta right before serving to prevent sogginess.
  • Store tomato topping separately for up to 2 days in the fridge.
