  • 1/4 tsp salt
  • 1 cup fresh strawberries (chopped)
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1/2 tsp vanilla extract (for ice cream)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and brown sugar together until light and fluffy, then add egg and vanilla extract.
  3. In a separate bowl, mix oats, flour, cinnamon, baking soda, and salt, then combine with wet ingredients.
  4. Scoop dough onto baking sheet and bake for 10-12 minutes until edges are set. Let cookies cool completely.
  5. Macerate strawberries with sugar for 15 minutes, then blend into a smooth puree.
  6. Whip heavy cream until soft peaks form, then fold in strawberry puree and vanilla extract.
  7. Freeze mixture for 4-6 hours or until firm.
  8. Scoop strawberry ice cream onto one cookie and top with another to form a sandwich.
  9. Freeze assembled sandwiches for at least 2 hours before serving.
