Ingredients

Scale
  • 1 ½ cups apples, cut into small pieces (about 1 large apple)
  • ½ cup brown sugar
  • 1 ½ teaspoons ground cinnamon
  • ½ cup unsalted butter, at room temperature
  • ⅔ cup white sugar
  • 2 large eggs, at room temperature
  • 1 ½ teaspoons vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ cup milk

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
  2. Peel and cut apple into small chunks; set aside.
  3. In a small bowl, mix brown sugar and cinnamon; set aside.
  4. In a large bowl or stand mixer, cream together butter and white sugar until light and fluffy (2–3 minutes).
  5. Add eggs and vanilla extract; mix until combined.
  6. Add flour and baking powder, then mix slightly. Pour in milk and mix until fully combined.
  7. Pour half the batter into the loaf pan. Layer with half the apple chunks and half the cinnamon sugar mixture. Gently press into batter.
  8. Repeat layering with remaining batter, apples, and cinnamon sugar.
  9. Bake for 55–60 minutes, or until a toothpick inserted in the center comes out clean.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
