Cilantro Lime Pasta Salad is a fresh, zesty side dish made with tender pasta, bright lime juice, and fragrant cilantro. It’s easy to prepare, light, and perfect for summer meals, potlucks, or quick lunches.

  • 12 oz farfalle pasta
  • 1/3 cup fresh lime juice (about 3 limes)
  • 1/3 cup olive oil
  • 1 cup fresh cilantro, finely chopped
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp honey (optional)

Instructions

  1. Cook the pasta in salted boiling water until al dente, then drain and rinse with cool water.
  2. In a small bowl, whisk together lime juice, olive oil, garlic, salt, pepper, and honey if using.
  3. Add the cooled pasta to a large bowl along with bell pepper and red onion.
  4. Pour the dressing over the pasta and toss until evenly coated.
  5. Fold in the chopped cilantro and mix gently.
  6. Chill for at least 20 minutes before serving, then toss again and adjust seasoning if needed.

Notes

  • Use short pasta with ridges to help the dressing cling better.
  • Add extra dressing before serving if the salad seems dry.
