Chocolate Covered Cherry Brownie Bombs are rich, bite-sized treats made with fudgy brownie dough wrapped around juicy cherries and dipped in a smooth chocolate coating—perfect for holidays, parties, and edible gifts.

Ingredients

  • 1 box of brownie mix (plus ingredients to prepare it)
  • 3/4 cup chocolate frosting
  • 1 can cherry pie filling or maraschino cherries
  • 15 oz almond bark (melted according to package instructions)

Instructions

  1. Bake brownies according to package directions and let them cool completely. Do not overbake.
  2. Crumble the cooled brownies into a bowl and mix with 3/4 cup of chocolate frosting until the mixture resembles dough that can be easily rolled into balls.
  3. Take about 1 1/2 tablespoons of the mixture, flatten it, and place a cherry in the center.
  4. Fold the brownie dough around the cherry and seal it completely. Repeat for all bombs.
  5. Freeze the shaped brownie bombs for about 20 minutes to firm them up.
  6. Melt the almond bark as directed on the package.
  7. Dip each chilled brownie bomb into the melted almond bark, tap off excess chocolate, and place on wax paper to set.
  8. Allow to dry and set completely before serving or storing.

Notes

  • Do not overcook the brownies; they should be soft for easier mixing and shaping.
  • Maraschino cherries are easier to use than pie filling but may leak inside the bombs.
  • If the mixture is too dry, add more frosting a spoon at a time.
  • For storage, layer with parchment paper and refrigerate or freeze for later use.
  • Let bombs thaw in the fridge before serving if frozen. Do not microwave.
