  • 6 chicken thighs (boneless or bone-in)
  • 1 cup fresh parsley, finely chopped
  • 1/2 cup fresh cilantro, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup olive oil
  • 2 tablespoons lemon juice or vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a bowl, combine chopped parsley, cilantro, minced garlic, olive oil, lemon juice or vinegar, salt, and black pepper.
  2. Mix well to create the chimichurri sauce.
  3. Reserve half of the sauce for serving later.
  4. Place the chicken thighs in a bowl and coat them with the remaining chimichurri marinade.
  5. Let the chicken marinate for at least 30 minutes.
  6. Preheat a grill to medium heat.
  7. Place the chicken thighs on the grill and cook for about 6 to 7 minutes per side.
  8. Continue cooking until the chicken is fully cooked and reaches a safe internal temperature.
  9. Remove from the grill and let the chicken rest for a few minutes.
  10. Spoon the reserved chimichurri sauce over the chicken before serving.

  • Boneless chicken thighs cook faster, while bone-in thighs provide deeper flavor.
