Ingredients

  • 2 ripe mangoes (peeled and chopped)
  • 1 cup cucumber (chopped)
  • 1/2 red bell pepper (chopped)
  • 1/4 red onion (chopped)
  • 1 clove garlic
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tbsp vinegar (apple cider or white)
  • Salt to taste
  • Black pepper to taste
  • 1/2 cup cold water (adjust as needed)
  • Optional: fresh herbs (cilantro or parsley)
  • Optional: diced avocado

Instructions

  1. Peel and chop mangoes into small pieces.
  2. Chop cucumber, bell pepper, and onion evenly.
  3. Add mango, vegetables, garlic, olive oil, lime juice, vinegar, salt, and pepper to a blender.
  4. Blend until smooth.
  5. Add cold water gradually to reach desired consistency.
  6. Taste and adjust seasoning if needed.
  7. Transfer to a container and refrigerate for 1–2 hours.
  8. Stir well before serving.
  9. Garnish with herbs, avocado, or extra vegetables if desired.
  10. Serve chilled.
