Ingredients

  • 2 cups cooked cold rice
  • 1 pound chicken breast or thighs diced
  • 2 tablespoons oil
  • 2 eggs beaten
  • 1 cup peas and carrots
  • 1/2 onion diced
  • 3 garlic cloves minced
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce optional
  • 1 teaspoon sesame oil
  • 1/2 teaspoon black pepper
  • 2 green onions sliced

Instructions

  1. Heat oil in skillet or wok.
  2. Cook diced chicken until browned and cooked through.
  3. Remove chicken.
  4. Scramble eggs and remove.
  5. Cook onion, garlic, peas, and carrots for 2 to 3 minutes.
  6. Add cold rice and break apart clumps.
  7. Stir in soy sauce, oyster sauce, sesame oil, and pepper.
  8. Return chicken and eggs to pan.
  9. Toss well and top with green onions.
