This Chicken Cobbler is the ultimate comfort food recipe made with creamy chicken filling, frozen veggies, and a cheesy biscuit topping. It’s easy to prep, bakes to golden perfection, and is perfect for cozy family dinners.

  • 2 tablespoons butter
  • 2 cups cooked chicken, chopped
  • 8 oz. frozen peas and carrots
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 8 oz. cream of chicken soup
  • 1 cup chicken stock
  • 6 oz. Cheddar Bay biscuit mix
  • 1 cup milk
  • 1/3 cup shredded cheddar cheese
  • 1 tablespoon melted butter
  • Half the seasoning packet from biscuit mix

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9-inch baking dish with melted butter.
  2. Layer chopped cooked chicken on the bottom, then add frozen peas and carrots evenly over the top.
  3. In a bowl, mix cream of chicken soup with chicken stock and pour over the chicken and vegetables. Do not stir.
  4. In a separate bowl, mix biscuit mix with milk, shredded cheddar, and half the seasoning packet.
  5. Pour biscuit mixture over the casserole filling and tilt the dish to spread evenly. Do not mix.
  6. Bake for 50–55 minutes until the top is golden brown.
  7. While baking, mix melted butter with the remaining seasoning packet.
  8. Once baked, brush biscuit topping with seasoned butter. Serve warm.
