Cherry muffins are soft, fluffy bakery-style muffins filled with juicy cherries, perfect for breakfast, snacks, or a light homemade treat made with simple ingredients.

  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh or frozen cherries, pitted and chopped
  • 1 tablespoon flour (for tossing cherries)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin pan with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, whisk melted butter, eggs, milk, and vanilla extract until combined.
  4. Add the wet ingredients to the dry ingredients and mix gently until just combined.
  5. Toss chopped cherries with 1 tablespoon flour, then gently fold them into the batter.
  6. Divide the batter evenly among the muffin cups, filling each about three-quarters full.
  7. Bake for 18 to 22 minutes, until the tops are lightly golden and a toothpick comes out with a few moist crumbs.
  8. Remove from the oven and let cool for 5 minutes before transferring to a wire rack.

  • Frozen cherries should be thawed and well-drained before use.
