Cherry Garcia loaf cake is a moist, bakery-style loaf cake made with sweet cherries and rich chocolate, offering a balanced, indulgent flavor in an easy-to-slice homemade dessert.

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh or frozen cherries, pitted and chopped
  • 3/4 cup semi-sweet chocolate chips or chopped chocolate
  • 1 tablespoon flour (for tossing cherries and chocolate)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  5. Alternate adding the dry ingredients and milk to the butter mixture, mixing gently until just combined.
  6. Toss chopped cherries and chocolate with 1 tablespoon flour, then gently fold them into the batter.
  7. Pour the batter into the prepared loaf pan and spread evenly.
  8. Bake for 50 to 60 minutes, until the top is golden and a toothpick inserted into the center comes out with a few moist crumbs.
  9. Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack.
