Cheesy Zucchini Fritters are crispy on the outside, soft on the inside, and packed with savory cheese and fresh zucchini, making them a delicious and easy dish.

Ingredients

  • 2 medium zucchini, grated
  • 1 cup shredded cheese (cheddar, mozzarella, or parmesan)
  • 2 eggs
  • 1/2 cup flour or breadcrumbs
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons oil for frying

Instructions

  1. Grate zucchini and squeeze out excess moisture using a towel.
  2. Place zucchini in a bowl and add eggs, cheese, flour, garlic, salt, and pepper.
  3. Mix until well combined.
  4. Heat oil in a frying pan over medium heat.
  5. Scoop batter into the pan and flatten slightly.
  6. Cook for 3–4 minutes on each side until golden brown.
  7. Remove and place on paper towels.
  8. Serve warm.
