  • 16 oz cream cheese, softened
  • 1.5 cups sour cream
  • 2 tbsp fajita seasoning
  • 1 cup finely diced bell pepper, any color
  • 1/2 cup sweet onion, finely diced
  • 2 cups shredded chicken
  • 1/2 cup Cheddar or Mexi-blend cheese, shredded
  • 2 tbsp cilantro, chopped

Instructions

  2. In a mixing bowl, combine softened cream cheese, sour cream, and fajita seasoning. Mix until smooth.
  3. Stir in the diced bell pepper, onion, and shredded chicken until evenly distributed.
  4. Spread the mixture into a 2-quart casserole dish and level the top.
  5. Sprinkle shredded cheese evenly over the top of the dip.
  6. Cover loosely with foil and bake for 25–35 minutes or until edges are bubbly and the dip is heated through.

  8. Remove from oven, garnish with chopped cilantro, and serve hot with chips, veggies, or tortillas.
