A quick and flavorful cheesy beef quesadilla recipe featuring crispy tortillas, seasoned ground beef, and melted cheese. Perfect for busy weeknights or casual family dinners, ready in just 20 minutes.

  • 1 lb ground beef (85/15 or 90/10 lean)
  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 2 tbsp olive oil or butter
  • 1 tbsp taco seasoning
  • 1/2 cup diced onion (optional)
  • 1/4 cup jalapeños or bell peppers (optional)
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium heat and add olive oil. Add ground beef and cook for 6–8 minutes, breaking it apart until browned.
  2. Drain excess grease, stir in taco seasoning and a splash of water, and let it simmer for 2 minutes.
  3. Lay tortillas on a flat surface. Add a layer of cheese on half, top with beef, and sprinkle more cheese before folding in half.
  4. Heat butter or oil in a skillet and cook quesadillas for 2–3 minutes per side until golden-brown and cheese is melted.
  5. Remove, rest for a minute, then slice into triangles. Serve warm with salsa, sour cream, or guacamole.

  • Use a blend of cheddar and Monterey Jack for the best melt and flavor.
  • Don’t overfill tortillas to prevent cheese from leaking.
