Carrot Soup with Chermoula is a vibrant and healthy dish combining sweet carrots with warm spices and a fresh herb sauce for a bold, balanced flavor.

  • 6 large carrots, peeled and chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh cilantro, chopped
  • 2 cloves garlic (for chermoula)
  • 2 tablespoons lemon juice
  • 3 tablespoons olive oil (for chermoula)

Instructions

  1. Heat olive oil in a pot and sauté onion until soft.
  2. Add garlic and cook until fragrant.
  3. Stir in carrots and spices, cooking for a few minutes.
  4. Add vegetable broth and bring to a boil.
  5. Reduce heat and simmer for 20–25 minutes until carrots are tender.
  6. Blend the soup until smooth.
  7. In a bowl, mix parsley, cilantro, garlic, lemon juice, and olive oil to make chermoula.
  8. Ladle soup into bowls and top with chermoula.
  9. Serve warm.
