Instructions

  1. In a large mason jar or airtight container, combine rolled oats, chia seeds, cinnamon, nutmeg, raisins, chopped walnuts, coconut flakes, and salt.
  2. Add milk, Greek yogurt, maple syrup, and vanilla extract to the dry ingredients.
  3. Stir thoroughly until everything is fully combined and smooth.
  4. Fold in the freshly grated carrots until evenly distributed throughout the mixture.
  5. Cover the container tightly with a lid or plastic wrap.
  6. Place the oats in the refrigerator for at least 4 hours, preferably overnight.
  7. Remove from the refrigerator and stir well before serving.
  8. If the oats are too thick, add a small splash of milk and mix again.
  9. Top with additional walnuts, cinnamon, coconut flakes, yogurt drizzle, or maple syrup if desired.
