Instructions

  1. Wash the apricots, remove the pits, and chop them into small pieces.
  2. In a saucepan combine water and sugar, then heat over medium heat while stirring until the sugar dissolves completely to form a simple syrup.
  3. Allow the syrup to cool slightly before using.
  4. Place the chopped apricots, lemon juice, cardamom, and cooled syrup in a blender or food processor.
  5. Blend until the mixture becomes smooth and creamy.
  6. Strain the puree through a fine mesh strainer if a smoother texture is desired.
  7. Chill the mixture in the refrigerator for about 1 hour.
  8. Pour the mixture into a freezer-safe container and freeze for 3–4 hours.
  9. Stir the mixture every 30–40 minutes during freezing to break up ice crystals.
  10. Once fully frozen, scoop the sorbet into bowls and serve.
