Candied Jalapenos, also known as cowboy candy, are sweet and spicy jalapeno slices simmered in a tangy sugar syrup. This easy homemade condiment adds bold flavor to burgers, tacos, sandwiches, and appetizers.

Ingredients

  • 1 pound fresh jalapenos, sliced into 1/81/4 inch rounds
  • 3 cups granulated sugar
  • 1 cup apple cider vinegar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon celery seed
  • Optional: 1/4 teaspoon red pepper flakes (for extra heat)

Instructions

  1. Wear gloves and slice jalapenos into even rounds.
  2. In a large saucepan, combine sugar, apple cider vinegar, garlic powder, turmeric, and celery seed.
  3. Bring mixture to a boil over medium heat, stirring until sugar dissolves.
  4. Reduce heat and simmer for 5 minutes.
  5. Add sliced jalapenos and simmer for 4–5 minutes until slightly softened.
  6. Using a slotted spoon, transfer jalapenos into sterilized jars.
  7. Return syrup to a boil and simmer for 5–7 minutes until slightly thickened.
  8. Pour hot syrup over jalapenos, leaving 1/4 inch headspace.
  9. Seal jars and allow to cool. Refrigerate or process in a water bath for long-term storage.

Notes

  • Remove seeds and membranes for milder heat.
  • Allow candied jalapenos to rest for at least one week for best flavor.
  • Store refrigerated for up to 3 months or properly canned for up to 1 year.
  • Keep peppers submerged in syrup for optimal preservation.
  • Leftover syrup can be used as a glaze for grilled meats or vegetables.
