Bruschetta Dip is a refreshing and creamy appetizer that features a flavorful tomato topping served over a whipped cheese base. Perfect for summer parties, it’s easy to prepare and a guaranteed crowd-pleaser.

  • 4 on-the-vine tomatoes, chopped (about 2 cups)
  • 2 tablespoons chopped fresh basil
  • 1 clove garlic, minced
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 7.5 ounces crème fraîche
  • 1/4 cup plain Greek yogurt
  • 1/4 cup shredded parmesan cheese
  • 2 tablespoons chopped fresh basil
  • 2 cloves garlic, minced
  • Bread or crackers, for serving

Instructions

  1. Chop the tomatoes and combine them with olive oil, balsamic vinegar, 1 clove minced garlic, and 2 tablespoons chopped basil. Season with salt and pepper to taste.
  2. In a separate bowl, whip together the crème fraîche, Greek yogurt, shredded parmesan, 2 cloves minced garlic, and 2 tablespoons chopped basil using a hand mixer until fluffy (about 2 minutes).
  3. Spread the whipped cheese mixture evenly in a rimmed serving bowl or plate.
  4. Spoon the tomato mixture over the cheese layer.
  5. Serve immediately with bread or crackers.

Notes

  • Strain the tomato mixture in a mesh strainer for 20–30 minutes to prevent the dip from becoming watery.
  • Store the tomato topping and cheese base separately if making ahead.
  • Use sturdy bread or crackers to avoid sogginess.
  • Substitute crème fraîche with sour cream, mascarpone, ricotta, or cream cheese if needed.
