Brownie Bottom Cheesecake is a rich layered dessert with a fudgy brownie base topped by creamy baked cheesecake.

Ingredients

  • Brownie Layer: 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1/3 cup cocoa powder
  • 3/4 cup flour
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • Cheesecake Layer: 24 oz cream cheese
  • 3/4 cup sugar
  • 3 eggs
  • 1/2 cup sour cream
  • 1 teaspoon vanilla

Instructions

  1. Preheat oven to 325°F and prepare springform pan.
  2. Mix brownie ingredients and spread in pan.
  3. Bake brownie base 15 minutes.
  4. Beat cream cheese until smooth.
  5. Add sugar, eggs, sour cream, and vanilla.
  6. Pour filling over brownie layer.
  7. Bake 45 to 55 minutes until center is nearly set.
  8. Cool gradually and chill at least 4 hours.
  9. Slice and serve.

Notes

  • Use room temperature cream cheese.
  • Do not overbake cheesecake.
  • Chill overnight for best slices.
  • Freeze extra portions.
  • Top with ganache or berries.
