  • 2 cups old-fashioned oats
  • 1 cup whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 ripe bananas, mashed
  • 1/2 cup natural peanut butter
  • 1/3 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts
  • 1/3 cup mini chocolate chips
  • 2 tablespoons chia seeds
  • 2 tablespoons flaxseeds

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line two baking sheets with parchment paper.
  3. In a large bowl, combine oats, flour, cinnamon, baking powder, and salt.
  4. In a separate bowl, whisk mashed bananas, peanut butter, honey, eggs, and vanilla extract.
  5. Add wet ingredients to dry ingredients and mix until combined.
  6. Fold in raisins, walnuts, chocolate chips, chia seeds, and flaxseeds.
  7. Scoop dough onto prepared baking sheets.
  8. Flatten cookies slightly with the back of a spoon.
  9. Bake for 12–15 minutes until lightly golden.
  10. Allow cookies to cool on the baking sheet for 5 minutes.
  11. Transfer to a wire rack to cool completely.
  12. Store in an airtight container or freeze for later use.
