Ingredients

  • 3 medium beets, peeled and grated
  • 2 cups cabbage, shredded
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 6 cups vegetable or chicken broth
  • 2 tablespoons olive oil
  • 1 tablespoon vinegar or lemon juice
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tablespoons fresh dill, chopped
  • Sour cream for serving (optional)

Instructions

  1. Wash, peel, and prepare all vegetables.
  2. Heat oil in a large pot and sauté onions until soft.
  3. Add garlic and cook until fragrant.
  4. Stir in carrots and grated beets and cook for 5–7 minutes.
  5. Pour in broth and bring to a boil.
  6. Add potatoes and cabbage, then reduce heat.
  7. Simmer for 20–30 minutes until vegetables are tender.
  8. Add vinegar, bay leaves, salt, and pepper.
  9. Taste and adjust seasoning as needed.
  10. Stir in fresh dill before serving.

  • Add vinegar early to preserve beet color.
