  • 1 cup fresh blueberries
  • 1/3 cup shelled pistachios, roughly chopped
  • 1 cup cucumber, thinly sliced
  • 1/4 small red onion, thinly sliced
  • 1/4 cup crumbled feta cheese (optional)
  • 3 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash the spring greens thoroughly under cold water and dry them using a salad spinner or clean kitchen towel.
  2. Place the dried greens into a large salad bowl.
  3. Rinse the blueberries gently and allow them to dry.
  4. Add the blueberries to the bowl with the greens.
  5. Slice the cucumber into thin rounds and thinly slice the red onion.
  6. Add the cucumber and red onion to the salad bowl.
  7. Roughly chop the pistachios and sprinkle them over the salad.
  8. Add crumbled feta cheese if desired.
  9. In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and black pepper.
  10. Whisk until the dressing becomes smooth and well combined.
  11. Drizzle the dressing over the salad just before serving.
  12. Gently toss the salad until all ingredients are evenly coated and serve immediately.
