Blueberry Heaven Cookies are soft, chewy treats packed with fresh blueberries and a touch of vanilla, perfect for any occasion and easy to customize.

  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups fresh blueberries
  • 1/2 cup rolled oats (optional)
  • 1 teaspoon lemon zest (optional)
  • 1/4 cup brown sugar (optional, for extra depth)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Cream together softened butter and granulated sugar in a large bowl until light and fluffy.
  3. Add egg and vanilla extract, and mix until well combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add dry ingredients to wet ingredients, mixing just until combined.
  6. Gently fold in blueberries, rolled oats, and lemon zest if using.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing 2 inches apart.
  8. Bake for 12–15 minutes, or until the edges are golden brown.
  9. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • Chill the dough for 30 minutes for thicker cookies.
  • Use fresh blueberries for best results; frozen can be used without thawing.
  • Do not overmix the dough to maintain a soft, chewy texture.
  • Store in an airtight container for up to 5 days or freeze for up to 3 months.
  • Add white chocolate chips or nuts for variation.
