Blueberry Cream Cheese Bars combine a buttery crust, creamy filling, and juicy blueberry topping into a dessert that’s both nostalgic and irresistible. Perfect for brunch, snacking, or entertaining, these layered bars deliver balanced flavor in every bite.

Ingredients

  • Fresh or Frozen Blueberries – for tart, sweet fruit flavor
  • Cream Cheese – provides the rich, creamy middle layer
  • Sugar – sweetens both the filling and topping
  • All-Purpose Flour – forms the base and crumble structure
  • Butter – gives the base tenderness and flavor
  • Vanilla Extract – adds warmth and depth
  • Egg – binds the cream cheese mixture
  • Lemon Juice/Zest – adds acidity to balance sweetness
  • Cornstarch (optional) – thickens the blueberry layer

Instructions

  1. Prepare the crust by combining melted butter, flour, and sugar. Press into a pan and bake until golden.
  2. Whip cream cheese with sugar, vanilla, and egg. Spread evenly over the cooled crust.
  3. Cook blueberries with sugar and lemon juice to create a thick topping. Let cool slightly.
  4. Spoon blueberry topping over the cream cheese layer.
  5. Add a crumble topping using reserved crust mix or new streusel, then sprinkle over the top.
  6. Bake again until the filling is set. Cool completely and chill before cutting.

Notes

  • Use parchment paper for easy cleanup and removal.
  • Chill before slicing to ensure clean edges and layers.
  • Do not overbake to preserve the creamy texture.
  • Let cream cheese come to room temp before mixing for a smooth filling.
