  • 2 large eggs

  • 1 cup blueberries (fresh or frozen, drained)
  • 8 oz cream cheese (softened)
  • 1/4 cup sugar (for filling)
  • 1/2 tsp vanilla extract (for filling)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugar until light and fluffy.
  3. Add eggs and vanilla extract, mixing well.
  4. In a separate bowl, mix flour and baking soda, then combine with wet ingredients.
  5. Gently fold in blueberries.
  6. In another bowl, beat cream cheese, sugar, and vanilla until smooth.
  7. Scoop dough, flatten, add cheesecake filling, and cover with more dough, sealing edges.
  8. Place cookies on baking sheet with space between them.
  9. Bake for 12–15 minutes until edges are set and centers are soft.
  10. Cool before serving.
