  • 1 1/2 pounds boneless, skinless chicken thighs (or breasts), cut into bite-size pieces
  • 1 onion, diced
  • 8 ounces sliced mushrooms
  • 8 ounces fresh spinach, roughly chopped
  • 6 to 7 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded parmesan cheese
  • Cooking oil (olive oil recommended)
  • Kosher salt, to taste
  • Black pepper, to taste
  • Italian seasoning, to taste
  • Crushed red pepper flakes, to taste

Instructions

  1. Preheat your Blackstone griddle to medium heat for a few minutes.
  2. Add cooking oil to the griddle, then add chicken, diced onion, and sliced mushrooms.
  3. Season with kosher salt, pepper, Italian seasoning, and crushed red pepper flakes. Cook for 5–6 minutes, stirring regularly.
  4. Add chopped spinach and minced garlic. Cook for another 2–3 minutes, mixing frequently.
  5. Pour in heavy cream and add parmesan cheese. Stir to combine and let the sauce thicken for 1–2 minutes.
  6. Adjust seasoning as needed. Remove from heat and serve immediately.

  • Use chicken thighs for juicier results, but breasts work fine too.
