  • 4 cups cooked day-old rice
  • 2 tablespoons vegetable oil
  • 2 eggs, beaten
  • 1 cup frozen peas
  • 1 cup diced carrots
  • 3 green onions, sliced
  • 3 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Heat oil in a large wok or skillet over medium-high heat.
  2. Add beaten eggs and scramble until cooked. Remove and set aside.
  3. Add carrots and peas and cook until tender.
