This Berry Watermelon Fruit Salad is a refreshing, sweet, and colorful summer recipe made with fresh watermelon, mixed berries, mint, honey, and lime juice. It’s easy to prepare, perfect for picnics and BBQs, and naturally gluten-free and vegetarian.

Ingredients

  • 5 heaping cups seedless watermelon, chopped into ½ – 1 inch cubes
  • 2 heaping cups strawberries, hulled and sliced
  • 1½ cups blueberries
  • 1½ cups raspberries
  • ½ cup (packed) fresh mint, thinly sliced
  • ¼ cup pure honey
  • 2 tbsp fresh lime juice (about 1 lime)

Instructions

  1. Chop the watermelon into bite-sized cubes and set aside.
  2. Hull and slice the strawberries. Rinse and dry the blueberries and raspberries.
  3. Thinly slice the mint leaves into ribbons.
  4. Place all the prepared fruits and mint in a large mixing bowl.
  5. Drizzle honey and lime juice over the top.
  6. Gently toss the ingredients together, being careful not to crush the raspberries.
  7. Cover and refrigerate for at least 1 hour to allow flavors to meld before serving cold.

Notes

  • Best served chilled.
  • Can be made up to 1 day ahead; add dressing just before serving to avoid sogginess.
  • Store leftovers in an airtight container in the fridge for up to 4 days.
  • To make it vegan, substitute honey with maple syrup or agave nectar.
