Rustic berry mini galettes with a flaky golden crust and juicy mixed berry filling, perfect as individual desserts that are easy to bake and serve.

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 3 to 4 tablespoons ice water
  • 2 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
  • 1/4 cup granulated sugar (for filling)
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1 large egg (for egg wash)
  • 1 tablespoon coarse sugar (optional)

Instructions

  1. In a bowl, mix flour, sugar, and salt.
  2. Cut in cold butter until the mixture resembles coarse crumbs.
  3. Add ice water gradually and mix until dough just comes together.
  4. Form dough into a disc, wrap, and chill for at least 30 minutes.
  5. Preheat oven to 400°F and line a baking sheet with parchment paper.
  6. In a bowl, toss berries with sugar, cornstarch, and lemon juice.
  7. Roll out dough and cut into small rounds.
  8. Spoon berry filling into the center of each round, leaving a border.
  9. Fold edges over the filling to form galettes.
  10. Brush edges with egg wash and sprinkle with coarse sugar.
  11. Bake for 25–30 minutes until crust is golden and berries are bubbling.
  12. Cool slightly before serving.

Notes

  • Use berries straight from the freezer if frozen.
  • Do not overfill to prevent leaking.
  • Serve warm or at room temperature.
  • Reheat in the oven for best texture.
