Ingredients

  • Corn Tortillas – structure the layers and absorb the sauce
  • Cheddar & Monterey Jack Cheese – melt for gooey texture and flavor balance
  • Taco Seasoning – enhances the meat with bold Tex-Mex spices
  • Black Beans (optional) – add protein and texture
  • Green Chilies (optional) – for mild heat and added flavor complexity
  • Olive Oil – used for sautéing and preventing sticking

Instructions

  1. Sauté chopped onions and garlic in olive oil over medium heat until soft and fragrant.
  2. Add ground beef and cook until browned; drain any excess fat.
  3. Stir in taco seasoning and a portion of enchilada sauce, then simmer briefly.
  4. Preheat oven to 375°F and grease a baking dish.
  5. Spread a thin layer of enchilada sauce on the bottom of the dish.
  6. Layer tortillas, meat mixture, cheese, and sauce; repeat layers until full, ending with cheese on top.
  7. Cover with foil and bake for 25–30 minutes, then uncover and bake 10 minutes more until bubbly and golden.
  8. Let casserole chill for 10 minutes before slicing and serving.
