Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 cup cocoa powder
  • 1 cup granulated sugar
  • Pinch of salt
  • 1/2 cup milk
  • 1/4 cup oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cup boiling hot water
  • 24 pcs Double Stuf Oreos
  • Candy eyes
  • 1 cup unsalted butter, softened
  • 2 1/2 cups powdered sugar
  • 1 tsp vanilla extract (for frosting)
  • Gel food colors (orange, purple, green)

Instructions

  1. Preheat oven to 350°F and line a cupcake pan with liners.
  2. Whisk together flour, cocoa powder, baking powder, sugar, and salt.
  3. In another bowl, mix milk, oil, egg, and vanilla extract.
  4. Combine wet and dry ingredients, then slowly stir in boiling water until smooth.
  5. Fill cupcake liners 3/4 full with batter and bake for 22–25 minutes.
  6. Cool cupcakes in the pan for 5 minutes, then transfer to a wire rack.
  7. Make frosting: beat softened butter until creamy, add vanilla extract and powdered sugar gradually, and whip until fluffy.
  8. Divide frosting into bowls, tint with gel food colors, and frost cooled cupcakes.
  9. Make Oreo bats: split Oreos, cut one half into wings, and use another Oreo with cream as the bat’s body. Attach wings and candy eyes with frosting.
  10. Insert Oreo bats into frosted cupcakes and serve.
