  • 1/2 cup buttermilk
  • 3/4 cup cornstarch
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • Vegetable oil, for frying
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 12 tbsp sriracha or hot sauce (to taste)
  • 1 tbsp honey (optional)

Instructions

  1. Pat shrimp dry and season with salt and pepper.
  2. Prepare two bowls: one with buttermilk, one with cornstarch mixed with garlic powder.
  3. Dip each shrimp in buttermilk, then dredge in cornstarch, coating evenly.
  4. Heat oil in a deep skillet to 350°F (175°C).
  5. Fry shrimp in batches for 2–3 minutes per side until golden and crispy.
  6. Transfer shrimp to a paper towel-lined plate to drain excess oil.
  7. In a separate bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey (if using).
  8. While shrimp are hot, toss them gently in the sauce until well coated.
  9. Serve immediately for best texture and flavor.

Notes

  • Use fresh or fully thawed frozen shrimp for best results.
  • Air fryer option: cook at 400°F for 8–10 minutes, flipping once.
  • You can substitute buttermilk with milk + 1 tbsp vinegar or lemon juice.
  • Adjust spice level by increasing or reducing sriracha.
  • Serve over rice, in tacos, or lettuce wraps for variety.
