Baked chipotle salmon sushi cups are crispy, spicy, and flavorful bite-sized sushi made with smoky chipotle salmon and seasoned rice, perfect for easy appetizers or quick meals.

  • 2 cups cooked sushi rice
  • 1 lb fresh salmon (skin removed)
  • 2 tbsp mayonnaise
  • 1 tbsp chipotle sauce or chopped chipotle pepper
  • 1 tsp soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • Nori sheets (cut into squares)
  • Cooking spray or oil
  • 1 tsp lime juice (optional)
  • 1 tbsp cream cheese (optional)
  • 1 tsp honey (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and grease a muffin tin.
  2. Press cooked sushi rice into each cup to form a base and sides.
  3. In a bowl, mix salmon, mayonnaise, chipotle sauce, soy sauce, sesame oil, garlic powder, salt, and pepper.
  4. Spoon the salmon mixture evenly into each rice cup.
  5. Add small pieces of nori if desired.
  6. Bake for 12–15 minutes until rice is slightly crispy and salmon is cooked.
  7. Remove from oven and let cool slightly.
  8. Add optional toppings like avocado or sesame seeds.
  9. Serve warm.
