  • 1 cup all-purpose flour
  • 1/2 cup brown sugar

  • 1/2 teaspoon baking powder
  • 1/2 cup unsalted butter, melted

  • 3/4 cup apricot jam or apricot preserves

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a mixing bowl, combine the rolled oats, flour, brown sugar, salt, and baking powder.
  3. Add the melted butter and vanilla extract to the dry ingredients.
  4. Mix until the mixture forms crumbly clusters.
  5. Press about two-thirds of the mixture firmly into the bottom of the prepared baking pan to form the crust.
  6. Spread the apricot jam evenly over the crust layer.
  7. Sprinkle the remaining crumble mixture evenly over the apricot layer.
  8. Bake for 30–35 minutes until the top becomes golden brown.
  9. Remove from the oven and allow the bars to cool completely in the pan.
  10. Lift out using the parchment paper and cut into squares before serving.
