Ingredients

  • 2 cups fresh apricots, pitted and chopped
  • 1/4 cup sugar
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon gelatin
  • 2 tablespoons warm water

Instructions

  1. Wash, pit, and chop the apricots.
  2. Cook the apricots with sugar in a small saucepan until soft.
  3. Blend the apricots until smooth and allow to cool.
  4. Dissolve gelatin in warm water.
  5. Whip the heavy cream until soft peaks form.
  6. Mix the gelatin and vanilla into the apricot puree.
  7. Gently fold the whipped cream into the puree.
