Instructions

  1. Preheat the oven to 350°F (175°C) and grease a square baking pan.
  2. Wash the apricots, remove the pits, and slice them into small pieces.
  3. In a mixing bowl cream the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the vanilla extract.
  6. In another bowl combine the flour, baking powder, and salt.
  7. Gradually add the dry ingredients to the butter mixture alternating with milk until the batter is smooth.
  8. Spread the batter evenly in the prepared baking pan.
  9. Arrange the apricot slices evenly over the batter.
  10. Prepare the crumb topping and sprinkle it over the fruit.
  11. Bake for 40–50 minutes until the cake is golden and a toothpick inserted in the center comes out clean.
  12. Allow the cake to cool slightly before slicing and serving.
