  • 6 cups chicken broth

  • 2 cups fresh spinach
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook for about 3–4 minutes until softened.
  3. Stir in minced garlic and grated ginger, cooking for another minute until fragrant.
  4. Add turmeric, carrots, and celery, then stir to coat the vegetables with the spices.
  5. Pour in the chicken broth and bring the mixture to a gentle simmer.
  6. Add the chicken pieces and cook for 12–15 minutes until the chicken is fully cooked.
  7. Stir in fresh spinach and cook for 1–2 minutes until wilted.
  8. Add parsley and lemon juice, then adjust seasoning with salt and pepper before serving.
